Recently, as those of you who follow our instagram know, we posted a photo of some homemade banana bread. Banana bread is one of those magical things that can take something so past help, for example a bunch of brown bananas, and turn them into something so delicious. Although the thought of making a loaf of any kind might be daunting to some people, this one requires no live yeast or hours of waiting. In fact this recipe is easier than making cupcakes.
Ingredients
3 ripe bananas
3/4 cup of walnut halves or bits
1/3 cup of melted butter
1/2 cup of white sugar
1 egg
1 tsp of vanilla
1 1/2 cups of flour
1 tsp of baking soda
1 pinch of salt
(Chocolate chips can be added but the sugar should be reduced if you choose to do this)
Directions
Preheat the oven to 350º F (175º C)
Mash the bananas in a mixing bowl and mix in the melted butter
Beat the egg with a fork
Add the sugar, beaten egg, and vanilla to the banana mixture and stir lightly
Sift the flour
Add the sifted flour, baking soda, walnuts, and salt to the mixing bowl and stir just until combined
Pour the batter into a buttered loaf pan and bake for 50 minutes to an hour (until a knife, inserted in the center, comes out clean)
Remove from oven to cool
Call up friends and enjoy!
